Mandarine Cheesecake

Buttery chocolate, creamy cheesecake and fresh, juicy mandarines. Ready for a slice? :D

Ingredients

Shortcrust

  • 155 g flour

  • 1-2 tbsp honey

  • 20 g cacao powder

  • 100 g butter

  • 1 egg

  • pinch of salt

Filling

  • 500 g low-fat curd (Magerquark)

  • 2 eggs

  • 250 ml cream

  • 1 packet of instant custard powder

  • honey

  • can of mandarines

How to

  1. Knead flour, honey, egg, butter (cut into small pieces) together. Wrap the dough in cling film and let sit in the fridge for 30 minutes.

  2. Mix the curd with the 2 eggs, add the custard powder, sweeten with honey, add the cream.

  3. Grease the springform pan (Ø18cm) and line with the dough. First the base. Then make two rolls, press and form a 3 cm high edge.

  4. Preheat the oven to 170°C on upper/lower heat.

  5. Place the mandarines on the dough base, add half of the cheesecake cream, add more mandarines and the rest of the cream to cover everything.

  6. Bake for 1 hour. Check if everything is set with a toothpick (nothing should stick on it).

  7. Place a wooden spoon in the oven door and let the cheesecake cool down slowly (best overnight).
