Tahini Banana Bread

18. April 2022 | Recently I had pretty good experiences with BBC Good Food. Today I tried this recipe and it turned out so delicious!

The perfect balance between sweet and salty.

I’ve tried many banana bread recipes. Most are much too oily, have too much banana flavor or are too sweet. This one however is just right. Not too much butter, just the right amount of sweetness from 2 bananas balanced by the saltyness of the tahini.

Ingredients:

  • 100 g butter

  • 2 tbsp. erythritol

  • 70 g tahini

  • 2 eggs

  • pinch of cinnamon and salt

  • 275 g flour

  • 1/2 tsp baking soda

  • 60 ml milk

  • 2 mashed bananas

  • 2 tbsp sesame seeds

How To:

  1. Preheat the oven to 190° C upper/lower heat. Butter and flour a 20 cm square cake tin.

  2. Beat the butter with the tahini and erythritol until it becomes lighter in color.

  3. Add the eggs, one at a time. Then add the milk and mashed banana.

  4. In a separate bowl mix flour, soda, salt, cinnamon, and sesame seeds. Fold into the butter mixture, a third at a time.

  5. Spoon the batter into the prepared tin and bake for 50 minutes. Check with a skewer in the middle if it comes out clean, it is done.

  6. Let it cool on a wire rack.

  7. Once cooled down completely, enjoy it plain or add some whipped cream, cream cheese, chocolate ganache or (erythritol) icing sugar on top.
